Hilton Doha appointed Laurence Fernandez as the new General Manager of Trader Vic's and will be responsible for overseeing both the operations and commercial aspects as well as maintaining the brand and quality of Trader Vic's Doha from recruitment to service. Working with Trader Vic's for almost 18 years and with a proven track record on multi-site restaurant management and proven success in restaurant start-up and development, Fernandez will spearhead the opening of the Trader Vic's extension at the end of the year.
Fernandez led the successful openings and managed several concepts worldwide such as Trader Vic's restaurant & bar lounge, Senor Pico Latino restaurant & bar lounge."Over the years, Trader Vic's restaurant has been a great success in Doha and I am delighted to join the team as it enters a new, even more exciting chapter," said Fernandez.
Fernandez's first encounter with Trader Vic's began in 1999 as the assistant general manager of Trader Vic's restaurant and bar lounge in Marbella, Spain, stepping up as the General Manager of Senor Pico & Trader Vic's restaurants and bar lounge in Beirut, Lebanon. Fernandez moved to Dubai in 2003 for Trader Vic's restaurant and bar lounge in Crowne Plaza and then in Souk Madinat in 2006.
Fernandez worked as Assistant F&B director at Buccament Bay Hotel & Resorts, St Vincent and the Grenadines managing several Trader Vic's restaurants worldwide then returned to Europe to lead the Trader Vic's Hilton Park Lane in London as general manager.
